The College is organising a hands-on workshop in March on the concepts and preparation of care food (specially adapted meals for people with swallowing difficulties).
A speech therapist will explain key eating guidelines for those with dysphagia, and participants will try the IDDSI (International Dysphagia Diet Standardisation Initiative) home flow test to understand the different food texture levels. The instructor will demonstrate how to prepare a simple yet delicious soft-meal version of “Choi Yuen” chicken fillets, and everyone will have the chance to make it themselves while learning the basic principles and techniques of care food.
